Quiche is always a great option to take advantage of everything that’s lying around in the fridge begging to be taken advantage of. From vegetables to tofu, or even meat and fish, anything fits as a filling for that savory pie.
Today we bring you an option that is simple to make, but with all the steps done from scratch, including the dough. The recipe comes from Mariana at My Feed Choices, who chose to use broccoli, peppers, and mushrooms as the main ingredients for the quiche filling, but she suggests that seasonal produce should be the main ingredient.
Here is the recipe:
Ingredients:
For the dough:
. 1 cup whole spelt flour (155gr)
. 1/4 cup solid coconut oil (55gr)
. 6 tablespoons of cold water
. salt
Place the flour and salt in a bowl and add the solid coconut oil and mix with your hands
Add the water little by little and knead well.
Form into a ball and refrigerate while you prepare the filling.
Filling:
. 4 eggs
. 100 ml vegetable soy beverage
. 1 onion
. 1 clove of garlic
. 1 leek
. 1 bunch of chopped broccoli
. 3 mini peppers in strips (red, orange and yellow)
. parsley to taste
Start by sauteing the onion, garlic, leek, broccoli, peppers, and mushrooms in olive oil.
In a bowl beat the eggs with the parsley and add the vegetable drink.
Add a tablespoon of flour to the vegetables, and then the eggs.
Stir everything together and turn off the heat so that the eggs don’t cook.
Roll out the dough and place it in a baking pan, making some small holes with the help of a fork.
Place the filling on top and bake in a preheated oven at 180º for about 30 minutes.
