Let’s celebrate Banana Bread day with a healthy and simple recipe. The proposal is from Mafalda Sena.
World banana bread day calls for a recipe to match, right? The kind that goes really well with a cup of coffee or tea in the afternoon. And so here it goes, this time by Mafalda Sena, contestant of Masterchef Portugal and author of the page Senassaudaveis.
This is a recipe with no weird ingredients and it’s one of those where you only get one bowl mucky. All in, oven and done. Let’s try it out?
Ingredients:
2 bananas;
1 apple;
50g date paste or 7 chopped medjool dates;
5 eggs
1 tablespoon melted coconut oil
1/2 cup of coconut flour
1/4 cup ground flaxseed
1 teaspoon of baking soda;
cinnamon to taste
pinch of pink salt
roasted peanuts
It’s as simple as combining all the ingredients in a food processor (except the peanuts and chocolate chips) until it’s a smooth mixture (you can start by pureeing the fruit and adding the rest of the ingredients)
At the end you pour it into an English cake pan and finally add the peanuts and chocolate.
Bake in a preheated oven for 35/40 min at 180°.
