At Valdo Gatti, every pizza is made with the utmost care. The flour it is based on is made from 100% Italian and organic semi-whole wheat, with no genetically modified grain. They add a homemade natural yeast made with water, hand-picked natural salt and cold-pressed organic virgin olive oil. Then they let the dough rise slightly for a long time so that the result is always an artisan pizza, low in gluten and easily digestible, just like in the old days.
At this pizzeria, over 90% of the products are fresh and organic. They avoid pesticides, herbicides, genetically modified foods, hormones or antibiotics as much as possible, valuing respect for a “toxic-free” environment.
