You don’t need eggs to make an omelet. Take a look at this recipe made with grain flour.
We have already talked here about alternatives to the egg, and today we bring you another one. Grain flour doesn’t magically turn into the kind of poached eggs we all like to stick a slice of bread in. But, believe me, it makes a great omelet.

Grainomelet:
. 65 grams of chickpea flour.
. 1/2 cup of water.
. 1 teaspoon of black salt (black salt tastes like “egg”. If you can’t find it, use regular salt).
. 1/2 teaspoon oregano.
. 1/2 tsp. turmeric
. Extra-virgin olive oil thread.
Mix the flour and water in a bowl with the help of a fouet or fork until the flour is completely dissolved. Add the seasonings and mix again.
Take it to a medium non-stick pan and wait for it to heat up. Add a drizzle of olive oil and the omelet mixture.
Let it cook on one side for 2 minutes or until it bubbles and forms “little holes”. Turn the other way and count 30 seconds. Add the filling to half of the omelet, fold the half without filling over the half with filling, and you’re done!
