This time we bring you pumpkin risotto, to take advantage of this seasonal product transformed into a dish that is great for the colder days.<\/p>\n<p class=\"p1\">Recipe for two people:<\/p>\n<p class=\"p1\"><strong>For the pumpkin cream:<\/strong><\/p>\n<p class=\"p1\">1\/2 roasted pumpkin (hokkaido, preferably)<\/p>\n<p class=\"p1\"><strong>For the risotto: <\/strong><\/p>\n<p class=\"p1\">Olive oil <\/p>\n<p class=\"p1\">1\/2 onion, chopped<\/p>\n<p class=\"p1\">1 handful of minced leek<\/p>\n<p class=\"p1\">1 cup of risotto or carolino rice<\/p>\n<p class=\"p1\">1\/2 cup white wine &#8211; can be done without<\/p>\n<p class=\"p1\">Homemade vegetable broth &#8211; about 400ml &#8211; boil peels and tips of onion, carrot, leek leaves and herb stalks for 30 minutes, strain and use<\/p>\n<p class=\"p1\">Thyme or other herb<\/p>\n<p class=\"p1\">Smoked diced tofu baked with spices <\/p>\n<p class=\"p1\">Salt and pepper<\/p>\n<p class=\"p1\"><strong>Preparation:<\/strong><\/p>\n<p class=\"p1\">Start by sauteing the onion and leek in olive oil with a pinch of salt. <\/p>\n<p class=\"p1\">Then add the rice and stir so that all the grains are coated with olive oil. Then add the white wine and stir well.<\/p>\n<p class=\"p1\">When the wine has evaporated, start adding the vegetable broth one ladle at a time, stirring constantly.<\/p>\n<p class=\"p1\">When the rice is almost done, add the pumpkin puree (just beat the roasted pumpkin with the peel, without seeds).<\/p>\n<p class=\"p1\">Adjust the salt and pepper and finish with the tofu cubes and thyme or whatever herb you decide to use.<\/p>\n<p class=\"p1\">Serve it right away.
