From vegetables to tofu, or even meat and fish, anything fits as a filling for that savory pie.<\/p>\n<p>Today we bring you an option that is simple to make, but with all the steps done from scratch, including the dough. The recipe comes from Mariana at <a href=\"https:\/\/www.instagram.com\/myfeedchoices\/\" target=\"_blank\" rel=\"noopener\">My Feed Choices<\/a>, who chose to use broccoli, peppers, and mushrooms as the main ingredients for the quiche filling, but she suggests that seasonal produce should be the main ingredient.<\/p>\n<p>Here is the recipe:<\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<p><strong>For the dough:<\/strong><\/p>\n<p>. 1 cup whole spelt flour (155gr)<br \/>. 1\/4 cup solid coconut oil (55gr)<br \/>. 6 tablespoons of cold water<br \/>. salt<\/p>\n<p>Place the flour and salt in a bowl and add the solid coconut oil and mix with your hands<\/p>\n<p>Add the water little by little and knead well.<\/p>\n<p>Form into a ball and refrigerate while you prepare the filling.<\/p>\n<p><strong>Filling:<\/strong><\/p>\n<p>. 4 eggs<br \/>. 100 ml vegetable soy beverage<br \/>. 1 onion<br \/>. 1 clove of garlic<br \/>. 1 leek<br \/>. 1 bunch of chopped broccoli<br \/>. 3 mini peppers in strips (red, orange and yellow)<br \/>. parsley to taste<\/p>\n<p>Start by sauteing the onion, garlic, leek, broccoli, peppers, and mushrooms in olive oil.<\/p>\n<p>In a bowl beat the eggs with the parsley and add the vegetable drink.<\/p>\n<p>Add a tablespoon of flour to the vegetables, and then the eggs.<\/p>\n<p>Stir everything together and turn off the heat so that the eggs don&#8217;t cook.<\/p>\n<p>Roll out the dough and place it in a baking pan, making some small holes with the help of a fork.<\/p>\n<p>Place the filling
